Our breads are made with 100% organic flour, grains, seeds, and nuts. They are mixed and shaped by hand, slow fermented for flavor, texture, and nutritional qualities, and baked in a hand build wood-fired oven. Each week, we bake our three signature loaves and then throw in a few rotating recipes... some might be quite experimental!
Most recipes will use some (or a lot) of fresh whole-ground grains, ground on an awesome little German made KoMo mill. All of our ingredients are listed in the descriptions below. Some traces of NON-GMO canola oil may be present since it's used to grease our containers.

Slow fermented, levain yeast blend
100% levain leavened. Blend of organic white flour, whole milled wheat, and whole milled rye.
Whole milled wheat, sunflower, flax, pumpkin, homegrown corn, and oats.

Made with organic bread flour and semolina, fermented with our natural levain and coated is sesame seeds.

Sunflower Flax Levain
Whole wheat, type 85, white wheat, sunflower and flax seeds, all naturally fermented.
High Extraction Levain
Type 70 flour, levain, sea salt.
Double Fermented Pumpernickel
High extraction wheat, white flour, pre-fermented rye, molasses.
Flour, butter, eggs, cinnamon, sugar, yum!
Type 85 flour, levain, walnuts.
Rye with flax
70% whole-ground rye, flax, yeast and levain blend. Dense and delicious!
